Cucumber Raita

Raita is a cooling Indian side-dish - this one is made from yogurt and cucumber.

Serves 4-8 (depending on how you use it)

Ingredients

1 large tub of natural yogurt
1 cucumber, peeled, chopped into small chunks and drained
Salt

Directions

1. Mix the cucumber with the yoghurt and add a little salt to taste.
2. Chill in the fridge and take out just before serving. It cools down a hot curry!

Cook's note
– You can add chopped fresh mint.
– You can make a great raita with banana instead of cucumber – it's excellent with a lamb curry.
– Feel free to use chopped or sliced red onion with the cucumber.
