Jambalaya


Ingredients

  • 12 ounces boneless skinless chicken breast
  • 2 green pepper, chopped
  • medium onion, chopped
  • stalks celery, sliced
  • 1 (14 1/2 ounce) can whole tomato
  • 1/3 cup tomato paste
  • 1 1/2 cans beef broth
  • teaspoon dried parsley
  • 1 1/2 teaspoons dried basil leaves
  • 1/2 teaspoon dried oregano leaves
  • teaspoon Tabasco sauce
  • teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • lb shelled, steamed shrimp
  • cups cooked rice

Directions

    Cut chicken into 1-inch pieces.
  • 2
    Add all ingredients, except shrimp and rice, to crock pot.
  • 3
    Cook on low 8-10 hours or 3-4 hours on high.

    Add shrimp the last 15-30 minutes of cooking.

    Stir in rice when ready to serve.
