Pasta Shell Salmon Pot

This lunchbox is

Cooked Trufree Pasta Shells combined with flakes of salmon and petit pois and cress.

Makes: 4 servings
Preparation Time: 20 minutes

Ingredients
225g / 8oz Trufree Pasta Shells
1 Can Salmon Steak
2 Hard boiled eggs, diced
1 Pack cress

Dressing
4 x 15ml tbsp Crème fraiche
1 x 15ml tbsp Tomato ketchup
1 Lemon, juice of

Method
1. Cook Trufree Pasta Shells following on pack instructions. Add petit pois for final 2 minutes of cooking. Drain, and rinse in cold water and leave to drain in a sieve.
2. Lightly flake the salmon and combine with pasta, petit pois and remaining salad ingredients. Combine dressing ingredients and gently stir into the salad.
3. Store in a covered container and refrigerate. Serve in individual pots in lunch boxes along with a cool block to keep fresh. Remember a fork!
