Granny Smith Cake
Ingredients

1/2 cup chopped walnut
- 1 (18 ounce) box spice cake mix
- 1 (3 1/2 ounce) box instant butterscotch pudding mix (substitute vanilla, if you wish)
- 4 egg
- 1/2 cup canola oil (or any vegetable oil)
- 1/2 cup cold water
- 3 medium granny smith apples, peeled, cored and coarsely chopped
- 1 cup golden raisin (optional)
- icing sugar, for garnish
Directions
1Preheat oven to 325°F.
2Grease and flour a tube or bundt pan, then sprinkle walnuts in the bottom; set aside.
3In a large bowl, combine cake mix, pudding mix, eggs, oil and water; with mixer at medium speed, beat for 3 minutes or until well blended.
4Stir in chopped apples, plus raisins if desired.
5Pour batter into prepared pan and bake in preheated oven for 55 to 65 minutes or until a tester inserted in centre comes out clean.
6Cool in pan for 15 minutes, then turn out onto a rack and cool completely.
7Dust with icing sugar, if desired.
