Shrimp Over Linguine


Ingredients

  • lb dry linguine
  • tablespoons olive oil
  • cloves garlic, minced
  • 1 green onion, chopped
  • lb shrimp, peeled and deveined
  • 1/2 cup dry white wine
  • 1 (6 ounce) jar oil packed sun-dried tomato, drained and chopped
  • 1 (6 ounce) jar artichoke heart, drained and chopped
  • tablespoons caper
  • tablespoons chopped fresh basil
  • 1/4 cup freshly grated parmesan cheese

Directions

    Cook pasta according to package,drain.
  • 2
    Heat oil in large skillet,over medium high heat,add garlic and onion,saute until soft,about 3 minutes.

    Add shrimp and cook until opaque,about 2 minutes.

    Add wine and cook until reduced by 1/2,about 2 minutes.

    Add tomatoes,artichokes and capers.
  • 6
    Add basil and pasta,toss to coat well.

    Transfer to serving platter and top with grated cheese.
