Chocolate Chip Berry Mousse 31-Dec-1969
Chocolate Chip Berry Mousse A chocoholics delight, combining chocolate mousse with summer fruits and crunchy double chocolate chip cookies. Wheat and gluten free.
Serves: 6
Preparation Time: 20 minutes plus 1-2 hours chilling time
Ingredients
1 packet Trufree Chocolate Chip Cookies
500g frozen summer fruits – defrosted
150ml (1/4pt) whipping cream
250g tub of mascarpone
50g (2oz) icing sugar
85g (3oz) Dark luxury chocolate (gluten free)
Method
Blend or pulse the summer fruits.
Hand crumble the chocolate chip cookies (not too small), reserve a handful for decoration
Melt the chocolate in a small bowl over a pan of hot water or in the microwave on a low setting.
Whip the cream until it lightly peaks, add the mascarpone and icing sugar and blend into the whipped cream.
STIR THROUGH the creamed mixture half of the blended berries, the hand crumbled biscuits and the melted chocolate.
Divide the mixture among 6 glasses or pots and chill for 1 – 2 hrs
To serve: Top each glass with a good spoonful of the remaining berry mixture, decorate the top with the reserved crushed biscuits. |
