Jambalaya
Ingredients
-
12 ounces boneless skinless chicken breast
- 2 green pepper, chopped
- 1 medium onion, chopped
- 2 stalks celery, sliced
- 1 (14 1/2 ounce) can whole tomato
- 1/3 cup tomato paste
- 1 1/2 cans beef broth
- 1 teaspoon dried parsley
- 1 1/2 teaspoons dried basil leaves
- 1/2 teaspoon dried oregano leaves
- 1 teaspoon Tabasco sauce
- 1 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1 lb shelled, steamed shrimp
- 3 cups cooked rice
Directions
1Cut chicken into 1-inch pieces.
2Add all ingredients, except shrimp and rice, to crock pot.
3Cook on low 8-10 hours or 3-4 hours on high.
4Add shrimp the last 15-30 minutes of cooking.
5Stir in rice when ready to serve.

German Sausage and Apple Pancakes
Ingredients
Sauce-
2 teaspoons brown sugar
- 2 teaspoons cornstarch
- 1/2 teaspoon apple pie spice
- 1/2 cup apple juice or
cider
- 1 teaspoon lemon juice
- 2 medium cooking apple, peeled,cored and chopped medium
Directions
1Preheat oven to 400 degrees.
2In an oven safe skillet cook pork sausages until done.
3Remove, slice thin and pour off all the fat except 1 or 2 T.
4Mix together the eggs, milk and oil Add flour, 1/2 t.
5apple pie spice, salt and sausages.
6(some folks put the sausages in the apple syrup) Pour into hot skillet and bake in the oven for 15 minutes.
7Poke with a fork and bake for another 5 minutes.
8You want your pancake golden brown.
9Sauce------------------.
10Combine brown sugar, cornstarch and the remaining apple pie spice in a medium saucepan.
11Heat over medium high and add cider or juice, lemon juice.
12Stir well and cook until thick and bubbly.
13Add the apples (and sausage if reserving for sauce) and cook for 5 minutes more.
14Cut pancakes, plate up and serve with sauce.
