Mixed Melon Cubes with Fresh Berry Coulis This recipe is part of Lunchbox 5.

This lunchbox is wheat and gluten free.
Sweet, colourful and refreshing combination of potted melon. Select ripe melons for best flavour.
Makes: 4 servings
Preparation Time: 30 minutes
Ingredients
Wedges of ripe cantaloupe, honeydew, ogen and watermelon
Coulis
250g / 8oz Raspberries
125g / 5oz Blackberries
150ml / ¼ pt Cranberry juice
50g / 2oz Icing sugar
Method
1. Simmer coulis fruit with the cranberry juice for 5 minutes to soften. Place into a metal sieve and push through the fruit puree leaving the pips behind. Stir in the icing sugar and chill until required.
2. Cut melon away from the skin, remove seeds and cut into large cubes. Serve in individual pots accompanied by a portion of coulis dip in a separate container.
