Shrimp Over Linguine


Ingredients

  • lb dry linguine
  • tablespoons olive oil
  • cloves garlic, minced
  • 1 green onion, chopped
  • lb shrimp, peeled and deveined
  • 1/2 cup dry white wine
  • 1 (6 ounce) jar oil packed sun-dried tomato, drained and chopped
  • 1 (6 ounce) jar artichoke heart, drained and chopped
  • tablespoons caper
  • tablespoons chopped fresh basil
  • 1/4 cup freshly grated parmesan cheese

Directions

  • 1
    Cook pasta according to package,drain.
  • 2
    Heat oil in large skillet,over medium high heat,add garlic and onion,saute until soft,about 3 minutes.

    Add shrimp and cook until opaque,about 2 minutes.

    Add wine and cook until reduced by 1/2,about 2 minutes.

    Add tomatoes,artichokes and capers.
  • 6
    Add basil and pasta,toss to coat well.

    Transfer to serving platter and top with grated cheese.

    Pumpkin Rolls


    Ingredients

    • 3 egg, beat at hi speed 3 minutes
    • cup sugar
    • teaspoon lemon juice
    • 2/3 cup pumpkin
    • 3/4 cup flour
    • teaspoons cinnamon
    • 1/2 teaspoon nutmeg
    • teaspoon pumpkin pie spice
    • teaspoon baking powder
    • teaspoon ginger
    • 1/2 teaspoon salt

    Filling

    • cup powdered sugar
    • 1 (8 ounce) package cream cheese
    • teaspoons butter or margarine
    • 1/2 teaspoon vanilla

    Directions

    Beat eggs at Hi speed 3 minutes.

    Then stir in sugar, pumpkin and lemon juice.

    Sift dry ingredients and add to pumpkin mixture.

    Spread into greased and floured waxed paper lined 15x10x1" pan.

    Bake 15 min at 375 deg.

    Sprinkle kitchen towel with powdered sugar; invert.

    Roll roll and towell together tight while still warm; leave to cool.

    Beat filling ingredients until smooth.

    Spread and roll up, then chill.
