Packed Lunch Pasta Pots

A welcome change from sandwiches and provides two portions of fruit and vegetables, of the daily "Take 5" target.

You can prepare the evening before and chill oveight. Place in a lunch box along with a cool block and fork in the moing ready for a culinary treat later in the day.

Makes: 2 servings
Preparation Time: 15 minutes
Each lunch box serving provides: 2 portions of fruit & vegetables, 539 kcal, 26g fat, 0.3g sodium

Ingredients
125g / 5oz Trufree Pasta Penne
2 x 5ml tsp light and mild olive oil
75g / 3 oz full flavoured cheddar cheese, cut into dice size cubes
5cm / 2" piece of cucumber, diced
1 celery stick, cut into thin slices
75g / 3oz black or green seedless grapes, halved
2 carrots, peeled and cut into thin slivers

Dressing
1 x 15ml tbsp each of mayonnaise and natural yoghurt
1 x 5 ml tsp pesto sauce

Method
1. Cook the pasta following the on-pack instructions. Rinse with cold water and leave to drain.
2. Gently coat with olive oil.
3. Combine the cooked pasta with the prepared cheese and vegetables and gently stir in the dressing.
4. Divide between 2 individual plastic contaners and seal with a tight fitting lid.
5. Chill and eat within 2 days.
