Bubble and Squeak
Ingredients
-
2 cups potato, cooked and mashed (lumpy)
- 2 cups cabbage, chopped,parboiled
- 1/2 cup onion, finely chopped
- 1 teaspoon minced garlic
- 3 tablespoons chopped fresh chives
- 1/2 cup diced smoked ham
- 2 slices bacon, cooked,crumbled
- salt
- black pepper
- 1-2 tablespoon bacon dripping
Directions
1Mix together potatoes, cabbage, onion, garlic, chives, ham, and bacon.
2Season to taste with salt and pepper.
3Heat bacon drippings in skillet; add potato mixture and form a patty.
4Brown over medium heat on one side.
5Invert onto plate and serve.

The Gardenburger
Ingredients
-
2 teaspoons bulgur wheat
- 1 lb mushroom
- 1 cup diced onion
- 1/2 cup rolled oat
- 2/3 cup cooked brown rice
- 1/2 cup mozzarella cheese
- 2 teaspoons shredded low-fat cheddar cheese
- 2 teaspoons low fat cottage cheese
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1 dash black pepper
- 2 teaspoons cornstarch
- olive oil
- 1/4 cup boiling water
- 1/2 cup water
Directions
1Add the boiling water to the bulger wheat in a small bowl and let sit for about 1 hour.
2Steam the quartered mushrooms for 10 minutes.
3Remove.
4Steam the onions for 10 minutes.
5Remove.
6Keep mushrooms and onion seperate.
7Add 1/2 cup water to the oats and let them soak for 10 minutes.
8Drain excess water from oats and bulger.
9Combine the grains with the mushrooms, rice, cheeses and spices in a food processor and pulse 5 times or until ingredients are chopped fine but NOT pureed.
10Pour mixture into a bowl and add the steamed onion and cornstarch, mix well.
11Preheat oven to 300 degrees.
12Lightly oil a baking sheet.
13Lightly oil a skillet.
14Form mixture into patties and brown in skillet on both sides and remove to baking sheet.
15Bake for 25 to 30 minutes, turning half way through baking.
16These can be frozen after cooled.
